Chicken Fried Cauliflower Rice

Low Carb, Paleo, and Gluten Free

Makes: 4 Servings

Ingredients

1 pound of boneless chicken breast (cubed)

2 – 10 oz organic bags of cauliflower rice with peas and carrots already in it.

3 organic pastured raised eggs

1-2 TB spoons of organic avocado oil

1-2 TB spoons of Liquid Aminos or Coconut Aminos

Directions

1.      Heat your skillet to medium and add 1-2 TB spoons of avocado oil.

2.      Then add your cubed chicken and sauté for 4-5 minutes. Add salt & pepper for taste.  

3.      While sautéing your chicken, microwave your bags of cauliflower with peas and carrots for 5 minutes keeping your bags un-opened (follow directions on your bag for how to microwave).

4.      When the chicken is complete, remove and place on a plate.

5.      Now scramble your eggs in the same pan for 1 minute.

6.      Put the chicken back in the pan with your eggs along with the fried cauliflower and vegetables and stir (blend) for a minute.

 

Assemble it on your plate and sprinkle some of your Aminos on top for taste.  Yummy!
