Almond Flour Crackers and Yogurt Feta Cheese Dip

Almond Flour Crackers

Ingredients

  • 1 cup almond flour - Almond flour is more finely ground than almond meal and results in a lighter cracker.

  • 3 Tablespoons water – Water moistens the dough and acts as a binder.

  • 1 Tablespoon ground flaxseed - Flaxseed adds healthy fats and fiber to the crackers and helps bind them together.

  • 1/2 teaspoon sea salt - I like to mix in sea salt into the cracker and then a gentle sprinkle for the top.

 

Instructions 

  • Preheat oven to 350°F.

  • Add almond flour, water, ground flaxseed, and sea salt into a medium sized bowl and stir together until the mixture turns into dough.

Place the dough on a piece of parchment paper and another to cover.

Use a rolling pin to roll out the dough— about an 1/8 inch thick. It’s not going to be perfect. That’s OK.

  • Once the dough is rolled out, sprinkle some sea salt over the dough. Sea salt makes the crackers YUMMY.

  • Use a pizza wheel or knife to cut the dough into small squares or any shape that you like.

·         Carefully transfer crackers (still on parchment paper) to a baking sheet and bake the crackers for 20-25 minutes or until the crackers turn golden brown and crispy.

·         Let the crackers cool completely. Enjoy!

·         Place any leftover crackers in an airtight container or bag. Crackers will be good for about 4-5 days.

Feta Yogurt Dip 

Ingredients

1 cup plain Greek yogurt 

2 tablespoons organic pressed olive oil

1 tablespoon fresh lemon juice

1 tablespoon dill

2 teaspoons of minced garlic 

Salt and black pepper (to taste)

½ cup crumbled feta

Dill sprigs (for serving; optional)

 

Instructions

 

In a bowl combine the Greek yogurt, 2 tablespoons olive oil, 1 tablespoon fresh lemon juice, dill, and minced garlic.

 

Next, add the feta and stir lightly smash the cheese into the mixture using a fork. Season as needed with salt and pepper. Spring over some small dill sprigs if you like.
