Chocolate Coconut Almond-Cashew Butter No-Bake Cookies

Ingredients – Try to buy organic

1 1/3 Cup Almond & Cashew Butter

2 Tbsp Cocoa Powder

2 Tbsp of Coconut Oil

2tsp of real Vanilla Extract

1Tbsp of Erythritol (I like Swerve or Stevia)

2 Cups of Unsweetened Coconut Shreds or Flakes

 

Instructions

In microwave, melt coconut oil (a few seconds). Add almond butter, cocoa powder, vanilla, erythritol, and your unsweetened coconut for 30 seconds in microwave. Mix well.

Scoop a large Tbsp of mixture onto parchment paper. This will make 10-12 cookies. Place in freezer for 45 minutes.
